Blueberry Muffins

Blueberry Muffins
Makes 1 dozen
I have made it a habit over the last year to bring baked goods to my school meetings, in particular to my AAU Online group. It seems to be the best way I can show my appreciation for all of their support and hard work throughout the year.  Given that most of the meetings take place in the morning I was in search a good muffin recipe that could be altered by fruit and or nuts. This is a basic recipe with the addition of blueberries. This morning my IAD Portfolio class was the recipient of a basket of muffins.
 
2 ½ Cups Flour
½ Cup Sugar
1 Tablespoon Baking Powder
½ Cup Butter (1 Stick) Melted
1 Cup Milk
1 Large Egg
1 Teaspoon Vanilla Extract
1 Cup Blueberries


Mix together the flour, sugar and baking powder in a bowl. In a separate bowl beat, with fork, the milk, melted butter, egg and vanilla until combined. Add to the flour mixture and stir until moistened (batter will be lumpy). Mix in blueberries.
Spoon batter into greased muffin tin and sprinkle with sugar. Bake in 400 degree oven until top is golden brown (about 20 minutes). Remove muffins from pan immediately and cool on wire rack.
