Walnut-Thyme Honey

Walnut-Thyme Honey
Makes about 2 Cups
Several years ago my Sister and a couple of her friends Robert and MyKhanh started a “craft” club and whenever I am in Los Angeles visiting I am lucky enough to be included in these events.  While the crafts vary depending on the season, the food served is always the highlight. At the Holiday Cookie exchange in December MyKhanh introduced us to this Walnut-Thyme Honey condiment. Served with a sliced baguette, a simple drizzle of the honey over a wedge of cheese quickly had me in the kitchen asking for the recipe. When I returned home I bought all of the ingredients to see if It was easy to duplicate and had great success! The original comes from the bon appetit magazine holiday issue under “edible gifts”. 

1 cup walnut pieces
3/4 cup orange blossom honey
1/2 cup extra-virgin olive oil
Salt and pepper
1 Tbsp. fresh thyme plus 2 sprigs
1/4 tsp. finely grated lemon zest
 
Preheat oven to 325.  Spread walnuts on a rimmed baking sheet. Bake, stirring occasionally, until lightly browned and fragrant, about 15 minutes.
Whisk honey and oil in a medium bowl to blend. Season to taste with salt and pepper. Fold in walnuts, thyme and lemon zest. Place in jar, cover and chill.
Do Ahead:  Can be made 1 month ahead.  Keep chilled. Stir before serving.
