YUMMY Power Food Granola

Power Food | Granola
Makes 12 cups
This recipe is full of grains, nuts, seeds, fruits and natural sweeteners. It is very easy to prepare and can also be easily adapted to include your own choice of nuts and dried fruits and made dairy free by omitting the eggs.

 
 
 
 
6          cups old-fashioned rolled oats (not instant)
1 ½     cups chopped nuts such as almonds, pistachios, walnuts, pecans or a combination.
¼         cup raw hulled pumpkin or sunflower seeds
1/3      cup ground flaxseed
¾         teaspoon cinnamon
3          large egg whites
¾         teaspoon salt
¾         cup sweetener, such as honey or agave
1/3      cup olive oil
1          cup coarsely chopped dried fruit, such as cherries, apricot, cranberries, figs or pineapple.
 
Preheat oven to 350 degrees. In a bowl combine oats, nuts, flaxseed, pumpkin seeds,
nuts and cinnamon.  In another bowl combine the egg whites, salt, olive oil and
sweetener of your choice.  Stir into oat mixture.
 
Spread mixture in even layers on two rimmed baking sheets. Bake for 20 minutes
remove from oven and use spatula to gently flip granola and move it from the outer
edges.  Return to oven and bake until golden brown. Cool completely and transfer to
bowl to and stir in dried fruit.
